The gourmet restaurant is open Tuesday to Friday from 7.30pm to 9pm and Saturday lunchtimes and evenings.

Stéphane Carrade

Stéphane Carrade, a leading figure in South-Western gastronomy, is joining the Villa Navarre in 2019, with a restaurant that reflects his love of the local produce he grew up with.

He hails from the village of Borderes-sur-l’Echez, near Tarbes in the Hautes-Pyrénées.

He trained at the Lycée Hôtelier in Talence, and has worked in a number of prestigious establishments, including a long stint at Jean Bardet, a two-star restaurant in Tours, where he was promoted to sous-chef at the age of 28.

After arriving at the Skiff Club in Arcachon in July 2016, Chef Carrade has achieved a tour de force by obtaining 2 Michelin stars in less than four years, after winning his first star just a few months after opening the restaurant at the Hotel Haiitza.
